North Idaho College graduates celebrate commencement

School spirit was tangible Friday morning as North Idaho College's 2024 graduates celebrated one of the biggest moments in their academic journeys. That spirit was on full display with Hunter Johnston, who has performed as NIC's mascot, Cecil Cardinal, since April 2023. He made his way across the commencement stage wearing his fuzzy Cardinal red gloves and oversized plush bird feet. “I’m feeling good, I finally have a summer off. No summer classes,” said Johnston, who graduated from Coeur d'Alene High School with honors in 2021 and received a dual degree in chemistry and general studies from NIC.

Scout and Scarlett

“How much poop can two dogs make?” I say out loud filling the second bucket of brown goo from my two Labrador retriever puppies. Each shovel of digested food makes me wonder why my wife and I decide on two large dogs instead of small lap-puppies. As I fill the second bucket of doggie-doo on this blustery autumn afternoon, my mind fades to Shih Tzus and pomeranians with their dainty little toots which might take minutes to retrieve.

The wines of Piedmont

In the northwest corner of Italy, tucked between the borders of France and Switzerland, lies the Italian wine-growing region of Piedmont. The Italians produce some of our favorite wines, with many varietals coming from all parts of the country: from Piedmont and the Alto Aldige in the north, through Tuscany and Abruzzo in the middle of the country, to the southern appellations of Puglia and Sicily. We know many of them, but perhaps the least well-known and most expressive come from Piedmont.

Disrespected varietals

Varietally speaking, we all have our favorites. Overall in the US, Chardonnay and Cabernet remain atop the heap as the biggest-selling varietals. After those two there are many more grapes that seem to always garner interest. But at the bottom of the list are a couple of white grapes and a few more reds that, despite being produced into some lovely wines, garner as much respect as Rodney Dangerfield. Once wine consumers have a chance to try these wines and learn a bit more about them, though, they find they do deserve a spot in the wine rack. They go from never being ordered to at least modest representation and a grudging comment of "Hey that is pretty good!"

The high costs ofeating healthy - NOT!

Some people like to claim that eating healthier is more expensive. But, the true cost of eating lies in what it will cost you from a health standpoint. From this perspective, most of us cannot afford to NOT eat healthy because poor diet is linked to risk factors for so many diseases. While it is true, that fresh fruit and vegetables are more expensive than other processed and packaged food items, the focus should be placed on the total cost of eating. Here is what is meant by this.
