Relax with an easy breakfast

This weekend was a great time to get together with friends and family and enjoy the wonderful weather Idaho has to offer. The hum of lawnmowers and weed eaters echoed throughout the entire neighborhood. When it's this nice outside, one of my favorite things to do is get up early, grab a hot cup of coffee and sit outside reading the newspaper, and listening as the rest of the town awakens and prepares for the day.

I also like to take advantage of warm, sunny mornings by gathering with friends and family and enjoying a yummy breakfast. It's on mornings like this, that I'm happy I prepped breakfast the night before. This ensures a lazy, laid back morning filled with great food shared with great people.

This dish is best when prepared the night before and refrigerated overnight. Just pop in the oven, sit back and soak up the morning sun as these breakfast enchiladas cook into a healthy, no fuss delicious dish!

Breakfast Enchiladas

Spray a large baking pan with non-stick cooking spray

Ingredients:

2 c. chopped cooked ham

2 bunches chopped green onion

1 chopped green pepper

2 c. chopped mushrooms

1 small can diced green chilies

1 package of large tortilla shells (about 6-8)

6 eggs beaten with 2 cups of milk and 3 tsp of flour

sour cream

• mix ham, green onion, green pepper, mushrooms, chilies and one cup of cheese

• divide mixture evenly among 6 to 8 tortilla shells, roll up and place seam side down in the baking sheet.

• pour entire egg mixture over tortillas

• cover and refrigerate overnight

• place in preheated 375 degree oven for 45-50 minutes

• remove cover and sprinkle remaining cheese over dish.

• cook an additional 10 minutes uncovered or until eggs are done

• remove from oven and serve topped with green onion, sour cream and salsa.

Helpful Hints:

• This recipe is also great with bacon or sausage.

• If you don't have time to prep it the night before, it can still be put together and cooked the same day.
